New Zealand Recipes

We love our food in New Zealand! Read on for some of our favourite Kiwi recipes, including pavlova, mousetraps, Anzac biscuits, and bacon and egg pie.


Enjoy some classic Kiwi recipes in your own home – in New Zealand or anywhere around the world. These New Zealand recipes are Kiwi favourites, easy to make and enjoyed in homes throughout the country.

Anzac biscuits
These oaty biscuits are traditionally made on Anzac Day (April 25th), a New Zealand public holiday which honours and commemorates New Zealand and Australian soldiers who served in the First World War. The biscuits were created during the war, when families wanted to send nourishing treats to their sons and husbands on the front line; the biscuit had to have a long shelf-life so it would be fresh after the long boat trip, and had to be egg-free, as eggs were rationed.

1 cup flour
1 cup sugar
1 cup rolled oats
3/4 cup dessicated coconut
1 ½ tsp baking soda
100g butter
2 Tbsp golden syrup
2 Tbsp boiling water


Combine all dry ingredients except baking soda. Add melted butter. Mix baking soda with boiling water, then add to mixture. Place spoonfuls on a greased tray and cook at 180°C for 20 minutes. Cool then eat with a cuppa.

Pavlova
This meringue dessert was created in honour of the Russian ballerina Anna Pavlova, who visited New Zealand in 1926. Crisp on the outside, and soft and gooey on the inside, this tasty dessert is traditionally topped with whipped cream and fresh fruit. Try kiwifruit, passion fruit or strawberries. There is some controversy over whether the Pavlova originated in New Zealand or Australia, but we claim it as a Kiwi sweet treat!

4 egg whites
1 tsp vanilla essence
1 cup castor sugar
2 tsp cornflour
1 tsp vinegar
¼ tsp salt
Whipped cream
Fresh fruit


Beat egg whites until soft peaks form, then add castor sugar while mixing, until stiff peaks form. Add remaining ingredients, then turn the mix onto a tray covered in baking paper. Shape the mixture into a circle about 23cm across. Bake for 15 minutes at 140°C, then reduce oven temperature to 120°C and cook for a further 1¼ hours. Cool in the oven, then top with whipped cream and fruit.

Mousetraps
These yummy cheese toasties are a favourite NZ recipe for Kiwi kids, as an afterschool snack or weekend lunch. You'll need Vegemite or Marmite, a salty yeast spread that's a classic New Zealand sandwich and toast filler. Don't spread it too thick – both Vegemite and Marmite are strong on flavour.

4 slices bread
Marmite or Vegemite
Cheese (cheddar, tasty or edam)

Place bread on baking tray and toast lightly on both sides under the grill. Spread Marmite or Vegemite on one side of the bread, then grate or slice cheese to cover each slice of bread. Add slices of tomato, onion, Worcester sauce and cracked black pepper to your mousetraps for some extra goodness. Grill until cheese is melted, then remove from oven and cut into triangles.

Bacon and egg pie
A classic New Zealand recipe for meatlovers everywhere. It's great with homemade pastry!

Pastry:
25g plain flour
55g butter
2-3 Tbsp cold water
Pinch of salt

Filling:
170g bacon
5 eggs
100g cheese
2 large tomatoes, sliced
3 Tbsp chopped parsley
Pinch of salt
Freshly ground black pepper

Pastry: Mix flour and salt in a bowl, then add cubes of butter. Rub butter into flour until there are no lumps, then slowly add and stir in enough cold water to bind dough. Wrap in clingwrap and chill for 10-15 minutes before use.

Filling: Remove rind from bacon and cut bacon into small pieces. Have all ingredients on-hand. Roll out half of pastry mixture and line a greased pie dish. On your pastry, layer bacon then parsley, onion and half the cheese. Arrange half the slices of tomato on top of the cheese and season with salt and pepper. Break eggs onto the tomato layer, breaking the yolks as you go. Top with leftover cheese and tomato. Wet edges of pastry and place the second half of the pastry (rolled out) on top. Make small slashes on top of the pie and glaze with beaten egg or milk. Bake at 180°C for one hour. Remove and leave to cool.
